Denny's used to have something similar to this that was really good. So I put together my own. I made it for Sarah the other night for supper. We had it for lunch and supper the next day to.... Whatever makes the pregnant lady happy I guess.
Ingredients.
4 Russet potatoes.
Real bacon bits.
1 green pepper
1/2 Yellow onion.
2 Large eggs.
Shredded cheddar cheese.
Instructions.
1. Wash and cut your potatoes into chunks.
2. Lay them out on a greased baking sheet. and season them. I like to season them with salt, pepper, and Tony Chachere's Creole Seasoning.
3. Bake in oven at 400 degrees until tender.
4. While your waiting, dice your green pepper and saute in a frying pan.
5. Once your potatoes are done, add them to your bowl.
6. Pour your sauteed peppers on top of them.
7. Sprinkle a handful of bacon bits and shredded cheddar cheese over top and place in oven long enough to melt the cheese.
8. Fry eggs over easy.
9. Take bowl out of oven and place the two fried eggs on top.
